Sandwiches are something that I really enjoy eating. Whenever we go for a picnic, I like to have a sandwich in my picnic basket. My Blogging Marathon entries for the category – Picnic Hamper would not be complete without the recipe for a sandwich.

My favourite sandwich is kheema sandwich! I am a cafeteria junkie.. I love the greasy curried fillings with all the sauces, mayo and salad veggies wrapped in a porotta or a samoon. I even rate the cafeterias on their kheema sandwiches!

This is my version of the kheema sandwich

  1. Beef Kheema – 400gm
  2. Onion – 1 large diced
  3. Tomatoes -3 medium ones chopped
  4. Tomato paste – 1 tbsp.
  5. Green Chillies – 2
  6. Ginger garlic paste – 1 tsp
  7. Chilli powder – 1 tsp
  8. Turmeric powder – 1/4 tsp
  9. Coriander powder – 1/2 tsp
  10. Garam Masala – 1/2 tsp
  11. Salt – 1 tsp
  12. Coriander leaves – 1/2 bunch
  13. Ghee – 1 tbsp.
Green Chutney Mayo
  1. Mayonnaise – 1/2 cup
  2. Green chillies – 1
  3. Coriander leaves – 1/2 bunch

For the Kheema Masala
  1. Heat the Ghee (yes ghee!) in a pressure cooker and sauté the onions.
  2. When the onions are transparent and pink, add the green chillies and the ginger garlic paste to the pressure cooker
  3. Once the ginger garlic paste has cooked for 2-3 min. add the tomatoes and the tomato paste
  4. Cook down the tomatoes till the oil separates
  5. Add all the powders and cook it, if you feel the mixture is really dry add a tbsp. or so of water to this mixture (do this on a medium low flame)
  6. Mix kheema with the masala and pressure cook for 2-3 whistles
  7. Open the pressure cooker and cook till all the water evaporates and oil starts appearing on the sides
  8. Add finely chopped coriander leaves
For the Mayo
  1. Make a coarse paste of the coriander leaves, green chillies, garlic and salt
  2. Mix in with the mayo and can be stored in the fridge
For assembling the sandwich, you will need
  1. 1/2 Onions sliced thinly
  2. 1/2 Tomato deseeded and finely diced
  3. Mozzarella cheese – 1/2 cup
  4. Green chutney mayo

Spread the mayo on the slices of bread and spoon the kheema on it.

Add slices of onion and tomato on this and sprinkle some cheese on top

close the sandwich and spread butter on the sandwich

Toast till golden brown
